Oil viscosity and quality for built motor

I have 570 that is in supermotard trim, it's mainly street bike but sees track time and high rev abuse often. Currently @ 94h on the motor but it's getting built pretty severely at the moment. Will not open the cases and hopefully mains and rod will last for next 100h or so before need to rebuild.

Currently have been running Mobil Delvac MX 15w-40 mineral diesel oil with change interval of 5-10h depending how hard it's been ran. Without taking too much risks and hopefully getting the motor to perform best should I run different oil in it? This stuff always came out pretty clear and with very minimal or next to none metal shavings on drain plug (transmission clear shaving).

Been thinking to use Motul 300V 15w-60 double ester based synthethic oil, as I found to get it quite cheaply from eBay.
Finnish weather in summer is mostly +18-27 celsius so not too hot, but not the most cold either. Ran the first 5 to 25 hours using 300v 15w-50 oil but then the price of it jumped up about 25% per 4 liter, and decided to stick with Delvac.

For what it's worth I use a type of diesel engine oil as well, I have over 100 hrs of abuse logged on mine and still going strong, I found that clutch and gearbox action was smoother on mineral oil.

AMSOIL ZROD 20-50 for me, zinc in it makes the tranny shift smoother. Zinc has been left out of most oils now days. Think it may also help in cam wear too.

Motorex Cross Power 4T fully Synthetic 10W/60 in Summer
Motorex Cross Power 4T fully Synthetic 10W/50 in Winter
I'm tempted to try the good oil (Delo 4hungie)

Motorex Cross Power 4T Fully Syntetic 10w/60 and keep the air filter clean and you will get 300+ hours.
