Once properly jetted the Dellorto should be fine. A 39mm Keihin FCR would be a good choice if you just have to have a different carb.

A friend of mine has a brandnew FCR39mm for sale. He exchanged it for a 41mm on a K*M. I don't know the setting but it is removed from a new EXC 525, so it should be standard by the book.
