here's my thoughts.
sag
i firmly believe that the way you are trying to adjust the sag is flawed.
in the best case, where you springs are exactly correct for your weight, then it might have some slight viability.
but since thats not the case, either because your springs are 'close' for you weigh, the spring has a variance in the rating, the spring changes with time, your weight changes, etc.
so the only thing that it comes down to is the initial preload the spring is under, lets say 10mm.
then you adjust this preload, up and down, 2mm at a time to tune it to your liking.
look, if you crank down and increase the preload [this is actually what you are doing, nothing more] because your fat butt compresses the spring 'too much' according to this incorrect procedure, then when you go down a steep hill the back wont compress and follow the terrain and you'll have to sit on it to get any control by getting the spring to follow the terrain since you added your weight to the system. add to this that there is no linkage and its a total disaster. also this causes the back to 'sinkbug' and screws up the geometry and the front cant work right.
but i bet you wont even give it a try since thats not what your told by the masses.
valving
the hydralics arent able to be truely progressive like the spring although there are some tweeks that are supposed to help, i dont know about that though. but this isnt a big an issue as its made out to be.
