The PDS-X is a WP designation/standard for ktm, berg non-linkage bikes. WP, Factory Connection, Eibach, etc. make those springs. Race-Tech designate their springs as P05, P10, etc. and their spring rates are a little different than the WP PDS spring rates.
I think a PDS-5 is going to be a little soft for you. At 200 lbs. with the PDS-5 of initial spring rate at 6.6 you probably need too much preload to get the proper race sag. Max preload should be 10mm. With a PDS-2 (7.5/9.7) on my FE450, I have 8mm of pre-load, static sag is 25mm and race sag is around 105mm. I know others prefer a little more sag.
Then again if you mainly ride easy trails, dirt roads, you could probably get away with a little more preload to get your sag numbers within the right range. By doing this you could compromise bottoming resistance and it could make your shock feel a little harsh. I would not recommend that route unless you really want to experiment and play with suspension.
Suspension is all about preference. My buddy has a 2013 ktm 500 and he likes race sag close to 120mm. I've gone round and round with him on race sag settings and 120mm works for him. I know the berg's, new ktm's and my 380 are all different frames and chassis's but I like the back end up a bit. I want the front end to feel solid and planted. Race sag on my 380 is also at 105mm. Start with settings as outlined in the manual so you have a baseline. Adjust from there.
If you want a RaceTech spring, it looks like a P20 would work well on a 570 and 200lb rider. As mentioned contact Slavens racing or better yet a nearby suspension tuner you can work with.
