How dose a too rich main jet manifest its self.
IE; with wide open throttle would it let the bike rev up say in second gear and then bog as if its misfirering (but its not) sort of thing?

yes it could do that, but the problem is that could by caused by lots of things. I tend to jet a little rich on the main as it tends to cool the motor and means you can leave the throttle pegged without changing gears as much. Others prefer to go lean and change gears a lot. If you had a dellorto the best way to tell is reach down and pull the starter enricher and if what you are experiencing gets worse then it is because it is rich. Keihins choke does not work that way, but may give a bit of an indication.

a genuinely over rich bike will misfire evenly every 3-4 seconds like a morse code signal being taped out. the engine will be dull, flat and muffled. the tailpipe will be sooty. it will stall a lot.
