I don't have a 400 so I cannot tell you for sure but I will say that if you have a Dellorto carb on your bike you should only have to drop your jetting 2 maybe 3 jet sizes on the main from the 190 I would go with a 185 or maybe even the 188 you have. The pilot jet should be ok but maybe pick up one smaller just in case.
Many people like the FCR Keihin over the Dellorto and they do have their advantages in alot of areas but one thing it cannot beat is the rezilliance the dellorto has to altitude changes without having to rejet. If you drop one jet size for every 2000 ft change in elevation you should be in the ball park. I have run my FC550 with a 5000 ft change in elevation without rejetting and could feel no difference with the exception of it seemed to start better!!! Go figure, maybe I need a bigger starter jet......
