somebody please tell me:

- how does one execute those "side hill" jumps --- aka hitting a hill off camber, catching air, and turning the bike to come back down the hill

Pretty easy really, practice for 25 years on a trials bike, get perfect balance and throttle control.

Awesome is an oft overused word, but Mr Jarvis has earned it IMO.
