Not been riding my bike as much as I would like I've been really busy at work, but I've still been training very hard, well imagine my disbelief when out riding an extreme course I got arm pump so bad I couldn't hold on, is this normal?????

Sounds normal if you don't target your grip strength specifically in your training. Hard or extended offroad/trail riding
and hard, fast road or track racing places is very demanding on hands and forearms.
I guess everyone has their own preferred training methods but, personally, I find one of the best exercises to develop grip strength/stamina and help with arm pump is to pracise holding a couple of heavy dumbells for as long as you can. I just hold them by my sides like 2 heavy shopping bags and use a mix of heavy weights/short holds and lighter weights longer holds. When I can hold for over 3 minutes with the heaviest weight I add more. I prefer this method to the spring loaded grip strengtheners available. I guess you could use anything heavy enough but the dumbell grips are about the same dia as the handlebar grips so work well.

I grip the bike harder with my legs rather than trying to squeeze to hard on the grips and it gives you far better control over the bike.
Squeeze a tennis ball or rubber ball with your hands when you sit down to watch tv, 100 squeezes per hand per night should help.
Eat 2 or 3 bananas about 1hr before a ride, (have you ever seen a monkey get arm pump, they swing round the trees all day long)

A good way to strengthen your grip i found was.
Get a piece of old broom handle about 12 inches long, Drill a small hole through at 6 in and attach 4 ft of string to the pole, The other end tie half a brick or some other object about that weight, You can add or take away as you please, half a brick does me.
Hold your arms out in front of you while gripping the piece of wood, Now try and wind the string around the wood raising the brick off the ground. when it reaches the piece of wood wind it back down. Keep doing this till your arms are killing you, it wont take long
