If/when that happens, it's not too terribly difficult to shift the rim to the side by adjusting the spokes. Tedious, yes, but gets the job done.
Plenty of bikes get chain slap like that. Different tires/manufacturers, though the same size can and will NOT be the same actual size.
Also, rotating the wheel in the swingarm, ever so slightly, to move the tire away from the chain isn't a big deal, as long as you don't go crazy with it. Don't trust the marks on the swingarm either...LOL!

Gearing depends on the track(s). If memory serves, I ran a 14/48 for big tracks and a 13/48 for tighter tracks. Having the 6spd was great in that you can gear for getting off the line and out of corners, without sacrificing too much top speed. And sumo usually doesn't need a whole lot of top speed.
When I had a 17" in front I ran 120/70's. I liked the Metzlers. I switched to a 16.5" and never looked back though. I REALLY like the 125/80x16.5 Dunlop on the front.
The 165/55x17 will fit in the back as well. (again a Dunlop)
