5" rear wheel

Make sure all the chain guides are new or like new if not chain can ruined the side of the tire. I know because it happened to Me.

If/when that happens, it's not too terribly difficult to shift the rim to the side by adjusting the spokes. Tedious, yes, but gets the job done.
Plenty of bikes get chain slap like that. Different tires/manufacturers, though the same size can and will NOT be the same actual size.
Also, rotating the wheel in the swingarm, ever so slightly, to move the tire away from the chain isn't a big deal, as long as you don't go crazy with it. Don't trust the marks on the swingarm either...LOL!

Run the 5”. The chain will catch the tyre. We all go through it. There was a chain guide off the KTM SMR that slipped under the chain slipper but dont look to ba avail anymore.

I ran a 17"x5" rear with a 160/60-17 on my 2010FX450 without issue.
I believe you'd be fine.

Any tips on sprocket sizes and chain length @RogerB39? And front tyre size/profile?
 
Gearing depends on the track(s). If memory serves, I ran a 14/48 for big tracks and a 13/48 for tighter tracks. Having the 6spd was great in that you can gear for getting off the line and out of corners, without sacrificing too much top speed. And sumo usually doesn't need a whole lot of top speed.
When I had a 17" in front I ran 120/70's. I liked the Metzlers. I switched to a 16.5" and never looked back though. I REALLY like the 125/80x16.5 Dunlop on the front.
The 165/55x17 will fit in the back as well. (again a Dunlop)
NOTE-manufacturers vary WILDLY on sizes, in that the same size tire can be very different from one make to the next.

It's a different bike but same swingarm width, I race a 2015 KTM 450XCF. 5" rim, 165 Metzeler "slick", 16.5 front with their slick too.

You need a chain guide on top to avoid rash.
