how to find flatness of head and cylinder mating surfaces

i have a 1997 fe501e with a head gasket leak. I found water in the oil and changed the head gasket and now have antifreeze coming out of the head gasket. How do I check to see if the head cylinder is flat and if it's not flat what should i do to fix the leak?
 
Get some wet/dry sandpaper about #400 grit
Put it on a flat surface like a machine table or a thick peice of glass
You can check the surface with a straight edge

Then put the head on the sandpaper with gentle pressure and move it gently in figure 8 movements

Then have a look. The shiny bits were protruding more than the others

Keep going till it's all shiny


Do the same to the top of the barrel
