Klim gear is always good. Not sure where you're from in Canada, but as it's cold where I live, I would purchase an entirely different set of Klim gear than the fellow who lives in California. I have seen people wear Klim GoreTex winter parkas (without liners) over body armour with great results.
I had two Valdez parkas for a short while (I sold them for profit in a liquidation opportunity)... and I thought about keeping one because I liked it so much. It wasn't perfect, but it would certainly work.
As for riding in hot weather, a light shell like the Valdez might be good to throw on when/if it rains or gets cold, but take it off and just ride in armour if it's hot.
I have a Scott jacket with removable sleeves that works alright. It's too short for my torso, but that's my fault for buying it.
If I were to do it all again, I would not buy gear with internal rain layers (removable waterproof). I would either buy fully waterproof gear (goretex), or good normal gear with an over-suit for rainy days.

Slightly different approach here, I've used my old snowboard jacket over body armour. The jacket is waterproof and breathable, massive pit vents to cool if needed and plenty of pockets.
Also packs down pretty small and you can pick up last years colours at a good discount.

My coupla cents worth is......
Its a pain having to install and remove the water proof liner in my Scott Adventure gear for wet days in summer but the airflow on hot days without the liner is very nice......
My mates that run waterproof jackets cant get cool enuff in the hot conditions (I have yet to see truly waterproof zips) but don't have to stop and install liners.
Depending on temps I would go with Plumbob and wear an armour jacket (mess with armour) and add a water/wind proof jacket as required.

I'd throw down for Aerostitch Darien pants and a Darien Light jacket. Full Gore Tex, super burly, decent venting. You can sometimes find deals on used sets on the adventurerider forum. Not cheap, but good quality and totally weather proof.
