It is piss easy, but I think you have to/is easier to come down from the top. ie drop the forks out of the tripleclamp and slide down.
You will have to remove the handle bars and maybe speedo to get enough cable length to drop the forks out.
Measure how far through the top clamp your forks are so you can put them back to the same spot or you will change the suspension and geometry set up.

Hopefully someone else can shed some more light on this ?

Hmm sounds like way too much effort.

Unless there is any other ideas/options I'll either leave it or get a stealership to do it :p

Cut them up at the back.

I did it to mine as then I can remove them to clean up the forks after a run without removing the forks and wheel.

Put bike on stand
Remove front wheel 4 pinch bolts and shaft
remove front break caliper2 Bolts
loosen fork clamps 4 bolts each side
Slide tubes down and out
remove old covers slide up to remove 3 bolts each side

On re assembly pull break pads and clean grime from around break piston

Very Important to re torque all bolts to spec

should take about 30 minutes its good maintenance to take it all apart clean everything and re assemble

Another option is to cut away the webbed rear section of these guards, this enables removal & re-fitting without touching anything else. My 2004 KTM 400EXC came with guards like this as standard. I've modified the guards on my 690 and 390 without problems.

You reckon a metal cutting disc will be find to cut through?

Worth buying that wet suit like material for road only?

Metal cutting disc is overkill, I used a small hacksaw but a jig saw with a short blade would also work. Just finish off the edges with sandpaper.

The neoprene fork sleeves keep the crap off the forks, I've yet to have a leaking fork seal since using them. if the bike's wet or you've jet washed it, I slide the sleeves up to allow the lower fork (stanchions) to dry off off, prevents corrosion.

Anyone know where I can get some bolts for the oem Fork Guards, but not buying another whole set?

A ktm dealer or berg dealer should have them available. You can get them online too at any site that sells Oem parts.
